In this region of the Pyrenees in Navarra, shepherding has been a constant activity since ancient times. Since the Middle Ages, with the arrival of the first snows, a ritual begins that continues to this day: transhumance, when the sheep descend to the warm lands of the Bardenas Reales in search of pasture for the winter.
What do QUESO RONCAL do?
Roncal D.O. Cheese is made from raw sheep's milk, a completely natural product that comes from the milking of healthy sheep, mainly of the Latxa breed, which feed exclusively on grass and forage.
The production and maturation of this cheese are carried out only in the seven municipalities that make up the Roncal Valley: Burgui, Garde, Isaba, Roncal, Urzainqui, Uztárroz, and Vidángoz.
This cheese factory produces cheese in a completely artisanal way, following the traditional method, and is composed only of milk, animal rennet, and salt, ensuring that it retains its distinctive flavor and aroma.
With a minimum aging time of 4 months, the cheese gradually acquires its characteristic aroma, texture, and unmistakable flavor.
