The history of MACELLERIA POVOLO, located in Sommacampagna, in the province of Verona, dates back to the early 20th century when grandfather Giovanni decided to open the first shop.

Despite numerous challenges, including the hardships of war, it was Mr. Roderico who took over the family business.

Over time, he transformed the shop into a quality benchmark, dedicating his efforts to selecting the best raw materials, working hand in hand with local small farmers.

This commitment to excellence has been the cornerstone of his legacy, which continues to make a difference in the industry.

With the entry of the sons Daniele and Andrea into the business, MACELLERIA POVOLO has made significant qualitative advancements in two key areas:

Breeding of their own meats

To address the closure of small local farms and ensure high-quality meat, they started their own breeding operation, which has become the pride of the shop. In this breeding operation, only Limousine heifers are carefully selected, with particular attention to their diet, based exclusively on the best available forage and grains. The breeding process strictly adheres to the animals' natural growth times, avoiding any form of acceleration. The meat is then subjected to meticulous artisanal processing, with aging times varying according to the cut, up to three weeks. The result is finely textured meat, light in color, with a flavor that offers a perfect balance between delicacy and taste, along with extraordinary tenderness, ideal for the most demanding palates.

 

Mastery in counter processing

In the second area, MACELLERIA POVOLO stands out for its skill in turning meat processing at the counter into a true culinary art. Using excellent quality raw materials, they create "ready-to-cook" dishes that not only satisfy the most refined palates but do so with visually appealing presentations. Additionally, the sausages are handcrafted, meticulously following tradition. The butcher shop has also received a prestigious recognition, placing third in the national butcher competition "Piatto d'Oro."
