Our choice to produce cured meats locally through a short supply chain is a guarantee of origin, freshness, and authenticity. BRIGANTELLA The Lucanian Brigantella is the result of a blend of history, tradition, and innovation. Made with 100% Italian ingredients of the highest quality, it represents an authentic explosion of flavors and aromas. The meticulous selection of lean cuts of pork, combined with a blend of spices and pepper, gives this cured meat its distinctive round shape.
LUCANICA The Lucanica is prepared with fresh meat from national pigs raised in Lucanian farms. The denervated meat is expertly seasoned with salt, chili powder, and wild fennel. After a night of resting, we proceed with the stuffing into natural pork casing. The maturation, lasting about 18 days, grants the final product, free from gluten, milk derivatives, and preservatives, recognition for its extraordinary quality.
SOPPRESSATA The Soppressata is one of Italy's most esteemed cured meats. We use only the noblest parts of the pig, such as thigh and loin, along with bacon to ensure a proper balance of fat. The meats come from Lucanian farms, ensuring consistency in origin. After a resting period, the mixture is stuffed into the natural pork casing, and maturation lasts for about 30 days. Also, this product, free from gluten and milk derivatives, is recognized as excellence for its extraordinary quality.
