Caseificio Morandini has been a cheese producer since 1969. It produces mozzarella, ricotta, Gorgonzola DOP, and Grana Padano DOP.

The "NOSTRANO" cheese represents the essence of cheesemaking tradition, crafted with care and attention that make it unique in its kind. Made exclusively with whole milk, it undergoes no skimming, thus preserving all its nutritional qualities and the bacterial flora that contribute to its rich and authentic flavor.

The production process begins by heating the milk to the ideal temperature, to which rennet, a natural enzyme, is added to start the transformation of milk into curd. This step is crucial for the final consistency and taste of the cheese. The cheesemaker’s skill comes into play when the semi-solid mass is gently broken, followed by cooking the curd and drying the grains through precise mechanical rotation.

The cheese begins to take shape when the curd compacts at the bottom of the vat, becoming a single block ready for extraction.
