Cheese producer | CASEIFICIO FRATELLI LEPRE
About CASEIFICIO FRATELLI LEPRE
Located in Campobello di Licata , in the province of Agrigento, the Fratelli Lepre dairy is a family-run business that produces soft cheeses, pasta filata, fresh or semi-matured cheeses, such as mozzarella, burrate and smoked provola.
By choice, this artisanal dairy has never industrialised the process and still follows all stages of production: from daily milk collection to production and delivery of the finished product.
What do CASEIFICIO FRATELLI LEPRE do?
The milk, the basis of his creations, comes from cows that live in a healthy environment free of the stress typical of intensive industrial farming.
Production is in fact calibrated to the needs of the animals, with a diet based exclusively on natural products to guarantee the well-being of the cattle and the production of the most genuine milk possible. The milk used in its products is rigorously selected, the result of collaboration with two young and dynamic local companies:
- Azienda Agricola F.lli Spagnolo in Delia
- Azienda Agricola Sapienza Luana in Mazzarino, breeders for three generations with Brown cattle.
Both companies supply top-quality, controlled cow's milk with an unmistakable flavour. This milk quality is essential to guarantee excellent and unique creations.
Respect for this living food, its components and its taste has always been the company's benchmark. Depending on the pasture, the season and the lactation period, the milk is processed while preserving all those flavours that the land can offer, giving its products an unmistakable character.
Among the various products offered by this exceptional dairy are:
- Nodino: Delicate twists of raw cow's milk. This is the same pasta filata as mozzarella, but by knotting and breaking it by hand, it acquires a different ribbing, which achieves a slightly more 'al dente' texture when chewed.
- Provola Bianca: pasta filata cheese, white tending to yellow depending on maturity. It is pear-shaped with a hand-formed head. At the end of processing, it is tied to be hung to dry and mature for about a month. Its texture is soft and pleasant to the palate, with a sweet and delicate taste.
- Burratina: The creamy heart is made with only cream from raw, controlled and certified Italian milk. No thickeners, colouring agents or chemical additives of any kind are used in the preparation. It contains only fresh local milk, collected daily directly from the cowshed without intermediaries. At the point of sale, it is available in different variants: White (classic), Smoked, Chive flavoured, Champignon and Truffle flavoured, and the latest arrival, with an irresistible Pistachio filling. Five surprising taste declinations, soft, fresh and all to be savoured.
These products represent not only the tradition and excellence of the territory, but also a constant commitment to quality and respect for nature.
