Starting in July 2020, I decided to put my experience and skills at the service of everyone: from amateurs who want to bake excellent homemade bread, to professionals, to entrepreneurs who want to optimize production processes in their ovens, bakeries, laboratories. Even the students, who follow my courses at the I.F.S.E., International School of Cooking and Pastry in Piobesi Torinese.
I decided to deepen my knowledge in desserts, training myself in the great traditional fermented products (panettone and colombe) handled with sourdough. In all this I keep learning, trying, to put my hands in the dough because for me white art is like a dough: it grows, to improve.
