In Battipaglia the "Bentley" of buffalo mozzarella

Today we present to you a highly esteemed producer of one of the most famous delicacies in southern Italy: buffalo mozzarella.

First, let's clarify what buffalo mozzarella is and what sets it apart from regular mozzarella, also known as fior di latte.

 

What is Buffalo Mozzarella?

Buffalo mozzarella is a stretched-curd cheese produced exclusively with buffalo milk, while fior di latte is produced with cow's milk.

This cheese is produced in various regions of Italy, such as Lazio, Molise, Puglia, but the most famous comes from Campania, where the dairy "La Antica Mozzarella di Battipaglia" is located.

It can have different shapes: sphere, bite-sized, braid, pearl, cherry, knot, and egg.

The smooth surface has a porcelain white color, and the crust generally does not exceed one millimeter.

The goal is to recover, protect, and enhance the ancient art of Battipaglia Mozzarella production.
